Kelley’s Salsa Verde
Named for our niece, Kelley, who says this is her favourite Secret Ingredient condiment.
This one’s a classic for a reason: Fresh tomatillo, a mix of charred and roasted jalapeno peppers, zingy lime and earthy garlic are the backbone here. Added fresh green Thai chiles lifts the spice profile that gets muted in the roasting of the jalapenos, and adding fresh cilantro right at the end brings incredible freshness and opens up additional pairing options. There's a bit of ginger here, too, which enhances that freshness and gives it an anchor for more flavour pairings.
Naturally, this pairs well with all things Mexican and is a standout on fish tacos, and at breakfast with eggs. With the late-added cilantro, it really pops as a dressing with grilled scallops, or as a side dipper for a grilled flank steak, as an alternative to chimichurri.
